Pulling together Thanksgiving in Germany ain’t easy, especially when you find out afterward that Germans are not, repeat that, not familiar with biscuits. Thankfully, they gave the biscuits a chance otherwise, I would have had to eat biscuits for every meal for a week. So here is the recipe:
Ingredients:
- 4 cups all purpose flour
- 4 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 ½ sticks butter
- 1 ½ cups buttermilk
- Whipping cream OR combo of 1 Tablespoon butter and 2 Tablespoons milk
- Coarsely ground black pepper and a sprinkle of salt
How to make:
- Preheat oven to 450 degrees and line baking sheet with parchment paper.
- Combine flour, baking powder, baking soda and salt in a bowl and whisk together.
- Add butter to the flour mixture, and break apart with your fingers until the mix resembles coarse meal. Transfer to a large bowl.
- Gradually add buttermilk until the dough comes together in moist clumps.
- Transfer to a lightly floured surface and pat out into a 10-inch round, about ¾ inches thick.
- Using a biscuit cutter, cut out 8-12 rounds.
- Place the biscuits 2 inches apart on the parchment lined sheet pan.
- Brush the biscuits with cream and sprinkle with ground pepper.
- Bake the biscuits for 15-18 minutes.

Can you give some more details please about how to substitute butter and milk for whipping cream? How does that work?
Hello! I would say 1/2 tablespoon melted butter cooled with about 1/3 cup milk. Stir it together and then brush the tops of the biscuits with the mix. Whipping cream is only to top the biscuits, buttermilk is used throughout. If you cannot use buttermilk (I can’t since I’m lactose-intolerant) I use the ratio of 1 cup soymilk to 1 Tablespoon lemon/lime juice and let it sit. Works like a charm.
Thanks! We have no lactose issues, but I have friends who do and that soy-buttermilk substitution sounds like it will be very helpful when baking for them.
